This recipe for chocolate butter spread is something of a hidden treasure. It was found in the back of one of those recipe booklets that you can buy for $3 at tourist traps or antique stores. There are a thousand variations out there on honey butter or cinnamon butter, but I have never before seen or heard of chocolate butter. So I whipped some up, spread it on an english muffin, and fed it to my 6 year old daughter, who has now decided that chocolate butter is What’s For Breakfast. After the first morning she added sliced strawberries on top – I think she might be a chef in the making.
What a decadent treat to spread on your morning pastry! English muffins, scones, muffins, all perfect candidates for this lightly sweet spread.
- ½ cup lightly salted butter
- ¼ cup powdered sugar
- 2 tbsp unsweetened cocoa powder
- ⅛ tsp vanilla extract
- With electric mixer, whip butter until light and fluffy.
- Add remaining ingredients and whip until fully blended and color has lightened.
- Store in refrigerator.
